Thanks to modern technology, shredded little shrimp is a new product of Quang Ninh Seafood Trading and Production Co. Ltd. (in Van Don district), not only meeting increasing demand of local people but also promoting the value of local specialities.
Mrs Nguyen Thi Thu Hien – Director of Quang Ninh Seafood Trading and Production Co. Ltd shared some information about the new product:
“Having the strength in producing a variety of shredded seafood, we are trying our best to process products with unique tastes and high competitiveness thanks to advanced techniques. Therefore, we have been researching and processing such a convenient and easy-to-use shredded little shrimp, increasing the value of Van Don seafood.
To satisfy the market’s need, in early 2019, Quang Ninh Seafood Trading and Production Co. Ltd started to research the shredded little shrimp from fresh little shrimp, overcoming limitations of traditional products. After more than 6 months of research and testing, the company succeeded in producing the new shredded little shrimp.
Besides standard processes and modern production line, the company has directly bought fresh little shrimps from fishing boats in the water areas of Minh Chau, Ngoc Vung, Co To, Bach Long Vi etc. To have the best material, the company has annually purchased fresh little shrimps in the period from June to Oct which is the floating shrimp season with good quality for production.
After catching, the freshest batch of little shrimps will be taken to the factory for processing. The little shrimps are then preliminarily processed, washed with low concentration of salt water, removing impurities, ensuring to keep the freshness of the shrimp. Then, the shrimp will undergo the process of steaming, drying and shredding, marinating and stir-frying with spices on the pan for a while until it has eye-catching yellow color.
The finished shredded shrimp is then packed in a thick and pasteurized glass jar with a pressure boosting device at a temperature of 125 degrees Celsius. The product is rich in proteins, amino acids, zinc and vitamins that are beneficial to consumers’ health.
Bavabi little shrimp products have quickly satisfied the taste of the most difficult customers. Currently, the products are available at markets inside and outside the province with an average consumption of about 4,000 jars / month.
